Ingredients:
- 750 g fresh honey-dripped figs
- 375 g brown sugar
- 250 ml of water
- 1/2 cm fresh ginger
- 1 small cinnamon stick
- 1 tbsp lemon juice
Preparation:
Start by washing the figs, discarding the stem, and cutting them into quarters.
In a saucepan, bring the sugar, water, grated ginger, lemon juice and cinnamon stick to the boil. Stir and bring to the boil. Add the figs and stir until it boils again.
Lower the heat and cook for 45 minutes, stirring occasionally. After this time, check to see if it has reached the point of forming a road (when you run a wooden spoon along the bottom of the pan, a road should form).
Remove the cinnamon stick, grind it well, and return to the heat to mix for 5 minutes.
Let it cool and immediately place the jam in sterilized jars. Cover the jars and turn them upside down to create a vacuum for 24 hours, to increase the shelf life.
